fresh nachos

lately, one of our favorite {an easiest!} things to cook for dinner is what we like to call “Fresh Nachos”. we’d developed a rather unhealthy obsession of nachos from a local brewery down the street from our apartment and after thinking about how many calories were probably involved in them, we opted to create our own version! I simply saute some veggies – right now I’ve been using summer squash, broccoli, red onion and garlic. I roast an Anaheim pepper in the oven, remove most of the seeds because I don’t like it too spicy, and dice it up. then we pile all the veggies, some pinto beans, a diced heirloom tomato and feta cheese on top of some tortilla chips, and voilà! Fresh Nachos!!

making my own nachos is one of my favourite meals. it’s super easy and can me more delicious than eating out…plus you get to control what you’re putting on top of them. yours look so yummy!

That sounds so amazing! And especially with all the fresh ingredients. It’s like the perfect thing to snack on during the summer with a pint of beer or pitcher of margarita beside you.
Yum! Such a fun dinner. We like to do this too. I get fresh tortillas, sprinkle them with lime juice and coarse salt and bake them in the oven so they are crisp – worth the extra step, I swear!
Yum! I love nachos and don’t often have them because they are so unhealthy… I’m going to have to try this version!
