bite + sip : tempeh curry with apricot chutney

it’s been awhile since I posted anything about what I’ve been cooking.  I’d gotten into a rut where I’d set off to the grocery store with out a list and always ended up coming home with bags full of familiar things to cook.  do you ever do that?  just buy food aimlessly and end up eating the same thing, over and over?

so this week I made a list.  and first up on my list of things to make was Tempeh Curry.  I loosely followed Heidi’s recipe, combined with another one that included coconut milk here, and topped it with a homemade spicy apricot chutney.  it was delish.
