have you ever heard of bibimbap? it’s a signature Koren dish that’s super tasty. the word literally means “mixed rice” and it’s served in a bowl with mixed veggies, your meat of choice and a fried egg on top. I had it for the first time a week or so ago at one of my favorite local spots and it’s pretty much the best thing I’ve tasted recently.

a few days ago, I set out to recreate the meal with this recipe from Bon Appétit and was not disappointed. I thought it would be super time consuming, having to create all the separate veggies, but it wasn’t too bad. I slightly altered the recipe by using Brussels spouts rather than spinach, omitted the zucchini and didn’t add any meat. {though I would have added tofu if I’d had any!} it was so good!! try it and enjoy!

    Love Bibimbap! There is a restaurant here in LA that has a squid version. I had similar thoughts as you that it would take forever to make all the veggies so have never tried it at home. Going to try it next week now! Thanks!

    I love bibimbap! When you ate it in the restaurant, did they serve it in one of those heavy stone bowels that stays hot for your whole meal? I think it’s part of the charm, and my husband and I are on the hunt for a set for our house – then our homemade bibimbap dreams (who knew there was such a thing?) will be complete!

      no! I actually didn’t have it at an authentic Korean restaurant. just a little bottle shop with an amazing chef! but now I’m off to hunt this magic bowl.

    So happy to see Bibimbap here :) Yes, it’s usually served in a black hot pot to keep everything sizzling and warm. It’s super healthy and you can also a bit of soy sauce instead of the spicy red sauce. It’s such a homey dish for any Korean. So glad you enjoyed :)
