guest post: brown butter quinoa with baked eggs

Hi there, this is Lynn with Satsuma Press.  When Alyson asked me if I wanted to write a guest post for Unruly Things, I wasn’t sure what I’d write about. She said it didn’t need to be about babies or little ones or pregnancy, but I thought – in some round about way – it should be. So what I decided to share is a simple meal that could be put together easily once her little man arrives – by her or by a friend. (One of the best things I received after Liam was born were meals made by friends, especially those first weeks of being a mama! I can remember still how very hungry I was after Liam was born seven years ago.) I love to cook and I don’t much follow recipes, so I’d like you to think of this more as a guideline, a jumping off place. Whether you have a newborn baby or not, this is a meal that comes together pretty fast, I promise. I made it for dinner for Liam and I last night without planning any of it ahead of time; I made it again for lunch today because it was so good and I needed to photograph it. (Liam wondered WHY on earth I was taking photos of my lunch!) It’s important to me to eat good food, real food – not that we don’t have lapses, which are fine – but for the most part, we sit down to a family meal every single night. My letterpress studio is here at home so depending on my work schedule, some times I make elaborate meals, sometimes not. But we eat well around here and I am glad for it. This meal I’m sharing with you is a little bit decadent, but still so good for you.

BROWN BUTTER QUINOA with BAKED EGGS (for as many as you want)
Here’s what you will need. I don’t list quantities because these will vary depending on how many people you’re feeding and how hungry they are. You have to be willing to wing it a little, but I think cooking is a lot more fun this way. It can be trial and error at first, but you’ll learn as you go – about how to season properly, how to know just when to pull something from the stove top or oven, how to look at what you have on hand and throw together a beautiful meal.

FOR THE QUINOA WITH BROWN BUTTER
quinoa
unsalted butter

FOR THE COMPOUND BUTTER if you’re making it
unsalted butter
Italian parsley
chives
lemon
sea salt
fresh ground pepper

FOR THE BAKED EGGS
eggs – the very best you can get
heavy cream
parmesan
ham (optional)
sea salt and fresh ground pepper
chives
other ideas – gruyere, bacon, leeks, spinach, pesto

BROWN BUTTER … is a magical thing and so easy to make. Put your butter – use a tablespoon per serving – in a small saucepan like the one shown here. Heat it over a moderate flame til it melts and begins to foam. Stir and keep stirring as it begin to brown. It will smell nutty and delicious. I like to brown the butter as much as possible before it burns; this takes about 5 to 7 of minutes and you’ll need to tend to it carefully. Keep in mind that it will continue to cook if you leave it in the hot pan, so it’s best to transfer it, once browned, to a small dish.

COOKED QUINOA … the ratio for quinoa, which is full of good nutrients, is two parts water to one part quinoa. Rinse the quinoa well, place it in a pan with the water and a bit of salt. Bring to a boil, cover and simmer about 10 minutes. Many recipes say longer, but I’ve found that 10 minutes works fine for me and leaves that addictive chewiness that I like so much. Note – you can very easily make a huge batch of quinoa ahead of time. Just reheat in the microwave or stovetop when you need it. Also, I could not recommend these quinoa patties more, if you should happen to have extra cooked quinoa on hand.
Toss the cooked quinoa with the brown butter and some finely chopped Italian parsley. I serve a heaping (cooked) cup for each person, give or take depending on hunger. The nuttiness of the brown butter and quinoa are a lovely match, but if you don’t want to make the brown butter, just skip it. Toss the quinoa with extra virgin olive oil or some herbed compound butter (see below) or nothing at all.

BAKED EGGS … I made mine in individual ramekins, but you could also use a small enameled pan, like a Le Creuset if you want to bake several all together. Hungry people should have two eggs each. Preheat your oven to 400. I added the following things to my ramekin – diced rosemary ham, coarsely grate parmesan and some herb compound butter that I had made last week. (I know Alyson is a vegetarian so you could easily omit the ham.) Other things to add or substitute – crumbled crispy bacon, wilted spinach, leeks, gruyere, a dollop of pesto … Use whichever ingredients strike your fancy or that you happen to have on hand. Pour a little bit of cream into your ramekin, just enough to coat the bottom. Carefully crack an egg into the ramekin and then sprinkle with the ham and parmesan. Add a sliver or two of the compound butter and a little more cream, a tablespoon or two. Sprinkle the egg yolk with a tiny bit of sea salt. Bake in the hot oven for about 8-12 minutes or until the whites are set, but the yolk still runny. Nothing ruins an egg faster for me than a jiggly white so I make sure that it’s cooked through – and I love it when the yolk sets to a velvety softness. Grind some black pepper over the top, add some finely chopped chives if you like.

HERBED COMPOUND BUTTER … again, so easy and so delicious – and useful for so many things (think biscuits, scrambled eggs, toast, pasta). You can make compound butters in many flavors, but here’s what I used – finely chopped chives, Italian parsley, zest and juice of one lemon, fresh ground pepper, coarse sea salt. Soften one stick of unsalted butter and mix well with the everything else. You can chop the herbs by hand or give them a quick whir in the food processor. Put the compound butter it in a ramekin or glass refrigerator dish or form it into a log and wrap it in wax paper. It keeps for a long time and you’ll be very happy to have it around.

Sit down to a simple, good meal. Nice linens and plates always make a meal better, in my mind, so take the time – just a few minutes – to make it look pretty. Honest, it makes a difference. Enjoy.

Also a bonus – the perfect salad for lunch … iceberg lettuce, buttery bread crumbs, soft boiled egg, crispy bacon + homemade blue cheese dressing (buttermilk, gorgonzola, chives, salt, pepper, olive oil).

guest post: the nursing basket

Hello unruly things readers!  This is Jamie with A Desert Fete.

I have a little nugget of practical advice for all you soon-to-be or newish mom’s out there.

In the last few months of my pregnancy we, like most, took a number of classes on pregnancy, childbirth, and caring for babies. Some were super helpful, some were duds. (But that is another post.)

Our breastfeeding class was spot on. We left wanting more, but only because 2 hours was such a short time for such an important subject, and the lactation consultant who taught it packed in so much good info. Here was our favorite concept.

It is a scene well played in our household. (Ten fold in the later months of pregnancy, but I am completely guilty of it as a regular old non pregnant lady.) One becomes settled on the sofa, in bed, on the yoga mat…. and you realize you forgot a glass of water. Or your book. Or the remote. Then comes “Sweetie….? Could you bring me my….” Now imagine being settled with your little one happily latched on for supper. Maybe no one is even home to call on, and you realize you forgot your lip balm, and your lips are languishing in a desert of dryness. The horror! Enter:

Our instructor suggests keeping a basket handy that you always have by your side when about to nurse. It includes essentials for you, for example:

-a one handed read (ha)
-bottle of water
-snack
-phone
-iPad (lucky)

and for the little one

-a blanket (in case we fall asleep and want to stay there)
-a diaper & wipes for a quick change
-a burp cloth
-your feeding log (for the first weeks)

you get the idea.

Now go forth! Make your own list of must haves, then find yourself a nursing basket, fill it, and be prepared always! A few to get you started:

guest post: dolls & robots

Hi, This is Ali from Ali Loves Curtis.  What is it about babies in sailor wear? At a church meeting a few Sundays ago, I couldn’t keep my eyes off a chubby baby girl in a navy blue sailor hat with dress to match. I really love the old, classic stuff (like this vintage number from Petits Habits) and I like the cheeky, new stuff too (this trompe l’oeil shirt designed by Ritsuko Harai and this sail boat tee from Bobo Choses, for examples).

But these special little breton sweaters from Dolls and Robots are really tugging at my heartstrings with their irregular seams and button-up collars with contrasting fabric. They are available in red and blue this June. And those linen totes will be nice for toting baby W’s things at the Oregon Coast this summer.

hi everyone! my name is Kate from over at Nelson & Lorraine. my husband and I just had our first little bundle of joy, Nelson Jacob, on February 11th. I have to say it’s so exciting to be guest blogging here because that means Alyson and Levi’s little man has arrived! congrats!

one thing I have cherished since Nelson was born is nursing. one thing I haven’t been so crazy about are clothing options for the nursing mom. I practically live in two black Bravado nursing tanks. and while they’re super comfortable, I’m desperately wanting to wear cute tops and dresses this summer.

there have to be some tricks of the trade out there, so please share! on top of not wanting to have a boring wardrobe this summer I also have two outdoor weddings our little family is attending. the nursing dresses I’ve seen tend to be a bit on the boring side. if I go with a regular dress, does slipping off a shoulder strap work? or, if a dress has a cross front do you have enough access for breastfeeding?

congratulations, alyson. nothing is as happy as cuddling a newborn babe, especially when they are your very own! am so delighted for your duo to become a trio. it’s the best thing in the world. i’ve been a mom for just 2 1/2 years, so i thought i ought to make a list of my favorite and practical new mama supplies. my simple advice is to nap a lot and let your hubby help out as much as possible, especially in the beginning. take dozens of photos. enjoy every moment. onto the list.

Oxy Clean (sprinkle this in hot water and let those onesies–or diapers–soak in the sink. i swear by this stuff.)

• plenty of light-weight and over-sized swaddling blankets, my boy was definitely one who loved being swaddled. baby burritos are the cutest.

Healthy Sleep Habits, Happy Child by Marc Weissbluth, MD. don’t fret the first few months, but this book really helped me with the whole routine thing.

• a bouncer seat. we borrowed one and loved it, no swing necessary. we even fed him in it for awhile!

Fisher Price portable high chair. not fancy, but totally perfect. this thing has gotten so much mileage! you can take it anywhere, it’s not a mammoth fixture in your kitchen, you can wash it down in the tub and it turns into a booster seat for toddlers. and the little tray goes in the dishwasher like a dream. seriously.

Pack N’ Play crib. ours lives in our car as we are constantly headed out of town. i keep it packed with the sheet on and i also keep four yards of black felt (so cheap) with it. i pin up insta-curtains ANYWHERE we go; hotels, in-laws, etc. best black-out solution ever.

footsie outfits. babes kick off their socks constantly! however we did find some rad bamboo socks that stayed on like a dream.

Lansinoh breast pads and cream. (your girls will thank you.)

• a good diaper bag. one that is cool enough for your hubby to carry too. we like moop brand.

• a Boppy really is helpful. i was glad i took it to the hospital, especially since i had a NICU baby. it seems like a nuisance, but really nice when you are getting used to holding and feeding your darling.

• hand sanitizer. you’ll want this on-hand forever. i recently discovered that it removes sharpie pen from surfaces!

• a stock of simple thank you note cards. like onesies, you may need more than you think!

• snap n’ go frame stroller. (the guy at Baby’s R Us talked us out of getting the monster stroller) i loved this simple lightweight stroller, just unfold and snap the car seat in. genius and so easy to manage. we also love the Bob running stroller too (our two year old still rides in it).

• lots of good shows from Netflix to keep you entertained in the wee hours of the morning and for date nights in w/ your trio! i liked

• plenty of pre-prepped nutritious yummy food and groceries. you still have to ‘eat for two’ for awhile.

• the kids’ nalgene brand water bottle is the only sippy cup i’ve found that does not leak. save yourself (and your furniture) and buy this one first!

my quotable kid. this is a darling book ready to fill up with baby’s first words! i love having it on hand when my toddler started talking up a storm.

• cheerful fingernail polish. instantly feel pretty when mama’s body doesn’t quite look the same as it used to! i love sally hansen complete salon manicure in kook a-mango.
